One of the most popular and authentic dishes of Isfahan is Biryan. The name 'Biryan' can be found in the texts from the Safavid and Qajar periods, although its preparation style was different. Biryan's attractive appearance and unique taste have captured the attention of tourists, making it a must-try dish when visiting Isfahan. This decadent dish is made from lamb meat and lungs and is usually served at lunchtime.
To prepare Biryan, the lamb meat and fat are boiled together with onion, then, after mixing with saffron and dried mint, they are first minced and then roasted. In the same way, the lungs are first boiled, then minced, roasted, and served together with the meat. Almond flakes, walnuts, and cinnamon are also used to decorate this delicious food.
Biryan is usually served with broth, Sangak bread, lemon, fresh herbs, and Doogh (a mixture of water and yogurt).
